Croquettes from Boiled Broth Meat with Cheese

It's worth making good use of the meat we put in the pot for broth. You can turn it into these lovely croquettes that taste almost like cannelloni, just without the pasta wrapping them up. You really shouldn't miss these! Ingredients for about 25 croquettes 600g cooked meat from the broth. 80g grated cheese (the creamy kind). 1 or 2 eggs. breadcrumbs. for the béchamel 1/2 liter milk. 80g flour. 40g butter. 1 tablespoon olive oil. salt. Preparation Pick through the meat that's been left clinging to the bones from your broth and shred it up. Make the béchamel — you'll find the recipe here . Mix it together with the shredded meat and the cheese, then pop it in the fridge until it's properly chilled. Shape the croquettes using two spoons or just your hands. Dip them in beaten egg, then roll them in breadcrumbs. Fry them in plenty of hot oil and serve them right away while they're still sizzling. They're absolutely...

Cold Zucchini and Tuna Terrine

This is the kind of terrine that's perfect for a summer evening out on the patio!

Ingredients

  • 2 large zucchini
  • 50g fresh cheese, mashed with a fork
  • 150g mild cheese, grated
  • 300g tuna in oil (recipe here)
  • 100ml heavy cream
  • 4 whole eggs
  • salt
  • plenty of freshly ground black pepper
  • extra virgin olive oil

You'll also need:

  • 1 loaf pan, about 18x8cm
  • butter for greasing the pan
  • roasted red pepper for garnish

Preparation

Slice the zucchini lengthwise into thin strips and fry them on both sides until golden. Set them on paper towels to drain off any extra oil.
Grease your loaf pan generously with butter, then line the bottom and sides with the zucchini slices, overlapping them slightly so there aren't any gaps.
Preheat your oven to 180°C.
Take the tuna and break it up well with a fork, then mix it together with the eggs, cream, and both cheeses. Season with salt and a good grinding of black pepper. Pour this mixture into your zucchini-lined pan.
Fold the overhanging zucchini strips over the top to seal everything in.
Slide it into the oven and bake for about 30 minutes. If the top starts getting too brown during baking, just cover it loosely with aluminum foil.
Once it's done, carefully turn it out onto a serving plate and decorate the top with thin strips of roasted red pepper.
I hope you enjoy this one!
