Orange and Parmesan Salad

ingredients for 4 servings 5 oranges. 3 salad tomatoes. pitted black olives. Parmesan cheese shavings. for the vinaigrette: 2 tablespoons mild wine vinegar. 8 tablespoons extra virgin olive oil. salt. chopped fresh parsley. preparation Start with the vinaigrette. Whisk the vinegar together with the oil until it's well blended, add a pinch of salt, and stir in the chopped parsley. Let it rest for at least 20 minutes before using — this gives the flavors time to marry. Peel the oranges down to the flesh, making sure you remove all the white pith, then slice them into rounds. Peel the tomatoes and dice them into small cubes. Divide the orange slices among the 4 plates, place the tomato cubes in the center, then scatter the olives and Parmesan shavings over the top. Finally, drizzle the vinaigrette over everything and serve right away while it's fresh.  enjoy!

Mushroom and Chestnut Cream Soup

ingredients for 4 people 750g mixed mushrooms. 150g chestnut purée. 1 onion. 1/2 leek (white part only). 1 potato (about 120g). 1 liter vegetable or chicken stock. 80cc extra virgin olive oil. salt. freshly ground black pepper.   preparation Wash the chestnuts and with a sharp knife, make a cut in each one — don't cut too deep or they'll split, you just need to pierce through the outer shell. Bring a pot of water to a boil and add the chestnuts, letting them bubble away for 5 to 8 minutes. Being careful not to burn your fingers, peel them one by one with a knife. The outer skin comes off easily enough; the inner skin, well, if your chestnuts are fresh and good quality, that'll take a bit more patience, but they turn out beautifully... Now they're ready to freeze, preserve in syrup, or in this case, turn into purée . Simmer them with a bit of water until they're completely soft, then blend them smooth. Fry the mushrooms in a deep pan wi...

Heat the oil in a pot over medium heat and gently sauté the leek and shallots for about 7 or 8 minutes, keeping an eye on them so they don't burn. Add the potato, broken into chunks, and cook for another 3 or 4 minutes. Toss in the chopped broccoli along with the stock, cover the pot, and let it simmer for 15 minutes. Taste and adjust the salt if needed. Once you take it off the heat, stir in the ...

How to Make Puff Pastry

Sure, you can buy puff pastry ready-made at the store, and some of it's quite good. But once you try making it yourself, you'll taste the difference right away. The best part? Once it's made and still unbaked, it freezes beautifully, which makes life so much easier when you're ready to use it. In the photo, you can see the finished puff pastry before rolling it out, ready to work with or pop straight into the freezer. Ingredients 250g bread flour. 250g all-purpose flour. 10g salt. 250ml cold water. 380g unsalted butter. Preparation Mix together both flours, the salt, and the water. Knead until you have a smooth dough. Shape it into a ball and let it rest for 20 minutes. Roll it out on a lightly floured work surface or marble countertop. Keep rolling and flattening with your rolling pin. Once it's stretched out, cover it with plastic wrap or a damp cloth so it doesn't form a crust, then refrigerate for 1 hour. After the hour is up,...
