It's worth making good use of the meat we put in the pot for broth. You can turn it into these lovely croquettes that taste almost like cannelloni, just without the pasta wrapping them up. You really shouldn't miss these! Ingredients for about 25 croquettes 600g cooked meat from the broth. 80g grated cheese (the creamy kind). 1 or 2 eggs. breadcrumbs. for the béchamel 1/2 liter milk. 80g flour. 40g butter. 1 tablespoon olive oil. salt. Preparation Pick through the meat that's been left clinging to the bones from your broth and shred it up. Make the béchamel — you'll find the recipe here . Mix it together with the shredded meat and the cheese, then pop it in the fridge until it's properly chilled. Shape the croquettes using two spoons or just your hands. Dip them in beaten egg, then roll them in breadcrumbs. Fry them in plenty of hot oil and serve them right away while they're still sizzling. They're absolutely...
This dessert is a must on every Christmas table around here!
Ingredients
for 8 people- 8 eggs.
- 120g flour.
- 200g sugar.
- 1 pinch of salt.
for the chocolate coating
- 200g dark chocolate, grated.
- 250g heavy cream (35% fat).
you'll also need:
- 750g whipped cream with 100g powdered sugar.
- red berries (strawberries, raspberries...).
Preparation
To make the sponge cake, heat your oven to 180°C. Separate the egg whites from the yolks. Beat the whites with the pinch of salt until they form stiff peaks. You'll know they're ready when you can turn the bowl upside down and they don't budge. In a separate bowl, beat the yolks with the sugar for about 4 or 5 minutes until they turn pale and thicken nicely.
Using your hand or a spatula, gently fold in the sifted flour.
Finally, fold in the beaten egg whites in two batches. Don't stir, just fold from the bottom up with your hand or a spatula to keep all that air you worked so hard for.
Pour the batter onto a baking sheet lined with parchment paper, smooth it out, and bake for about 10 minutes until it's lightly golden. Don't peek in the oven while it's baking.
Once it's done, take it out and flip it onto a cotton kitchen towel. Peel off the parchment, then roll up the cake together with the towel. Let it cool completely like this.
When you're ready to fill it, unroll the cake (keep it on the towel), spread the whipped cream over it, then roll it back up using the towel to help you.
Cut a small piece off one end and place it on top of the larger roll to look like a little branch.
To make the chocolate coating:
For the chocolate coating: Put the cream in a saucepan and when it starts to simmer, add the grated chocolate. Stir well with a whisk until it melts completely, then take it off the heat. Let it cool down a bit before pouring it over the log.
Pour the chocolate over the log, then take a fork and make lines in the chocolate to look like tree bark.
Decorate with the red berries, or with marzipan mushrooms if you like.
