- 1 onion.
- 6 ripe tomatoes.
- 1 tsp sugar.
- 500cc vegetable or chicken broth.
- 50g pork lard (you can use olive oil instead).

Preparation
Heat a pot with the lard, then fry the chicken pieces—salted and dusted with flour first. Once they're nicely browned, toss in the potatoes cut into chunks...fry for a couple of minutes, then add the onion, chopped very fine...
once the onion has softened, add the peeled and crushed tomatoes along with that teaspoon of sugar. Let it cook for 10 minutes, then stir in the picada dissolved in the broth. Don't dump all the broth in at once—if the sauce gets too thick as it cooks, you can add more warm broth a bit at a time...
cover the pot and let it simmer on low heat until the chicken is tender and the potatoes are cooked through...
Enjoy!
