ingredients for 4 servings 5 oranges. 3 salad tomatoes. pitted black olives. Parmesan cheese shavings. for the vinaigrette: 2 tablespoons mild wine vinegar. 8 tablespoons extra virgin olive oil. salt. chopped fresh parsley. preparation Start with the vinaigrette. Whisk the vinegar together with the oil until it's well blended, add a pinch of salt, and stir in the chopped parsley. Let it rest for at least 20 minutes before using — this gives the flavors time to marry. Peel the oranges down to the flesh, making sure you remove all the white pith, then slice them into rounds. Peel the tomatoes and dice them into small cubes. Divide the orange slices among the 4 plates, place the tomato cubes in the center, then scatter the olives and Parmesan shavings over the top. Finally, drizzle the vinaigrette over everything and serve right away while it's fresh. enjoy!
with anchovies or with mushrooms!
ingredients
- 12 to 14 large mushrooms.
- 1/2 zucchini.
- one carrot.
- two cabbage leaves.
- two eggs.
- salt.
- plenty of black pepper.
- extra virgin olive oil.
you'll also need:
- anchovies in oil, or small mushrooms, fried beforehand.
preparation
Pull out the stems from the mushrooms. I literally yank them out - it leaves more room for stuffing. Set the stems aside and cook the whole mushroom caps in a pan with a drizzle of oil, salt, and a pinch of pepper. Set them aside when done.
Chop all the vegetables along with those mushroom stems into small dice. Sauté everything in the pan with a splash of oil and some salt. Just before taking it off the heat, pour in the two eggs beaten like you're making an omelet. Stir it all together until the eggs are cooked through, then set aside.
Fill each mushroom cap with the sautéed mixture and press half an anchovy (sliced lengthwise) on top of each one.Or instead, top each one with a couple of small mushrooms that you've fried ahead of time.
enjoy!
