Here's a recipe that makes for a wonderful breakfast treat — perfect when you want something a bit special to start the day. Place them in a bowl, drizzle with the tablespoon of oil, and cook (covered) in the microwave at full power for 12 minutes. Don't do it all at once — check the pumpkin every 4 minutes, stirring it and covering the bowl again each time, until it's fully cooked.
Remove from the microwave and mash it with a fork or potato masher. Set aside...
Preheat your oven to 180°C, convection setting or conventional (top and bottom heat).
In a bowl, beat the two eggs with the pinch of salt and the sugar. Add the melted butter, pumpkin purée, mandarin juice, and black pepper.
Once everything is well combined, add both flours, the baking powder, cinnamon, and vanilla. Beat until you have a smooth batter.
Pour the batter into the prepared pan...
scatter the walnuts over the top...
and pop it in the oven. Bake for about an hour. If the top starts browning too much, cover the pan loosely with parchment paper.
It's ready when a toothpick inserted in the center comes out clean.
Turn it out of the pan and let it cool on a wire rack.
Once cooled, dust generously with icing sugar...
