Fresh Cod Marinated and Baked

ingredients for 4 people 4 boneless cod loin fillets. 2 shallots. 2 garlic cloves. chopped parsley. 150cc extra virgin olive oil. 1 tablespoon caramel vinegar. salt and freshly ground black pepper. preparation Start by peeling the shallots and garlic cloves. Chop everything together with the parsley, then mix it well with the vinegar, olive oil, salt, and black pepper... Coat the cod fillets thoroughly with this marinade, making sure to cover both sides completely. Pop them in the fridge for at least two hours before cooking... Heat your oven to 190°C, with both top and bottom heat on. Place the cod fillets with their marinade in a baking dish and cook for 12 minutes... Enjoy!

Sardine and Black Olive Flatbread


Today we're making individual flatbreads — perfect for a fun supper!


Ingredients

for 4 people
  • 16 fresh sardines.
  • black olives with pits.
  • 2 salad tomatoes.
  • salt.
  • freshly ground black pepper.
  • extra virgin olive oil.

tomato sauce:

  • 100g onion.
  • 400g raw crushed tomatoes.
  • 2 cloves of garlic.
  • 1 tablespoon chopped parsley.
  • salt.
  • extra virgin olive oil.
  • 1/2 teaspoon sugar.

the dough:

  • 100cc extra virgin olive oil.
  • 100cc lukewarm water.
  • 10g fresh yeast.
  • 300g bread flour.
  • 1/2 teaspoon salt.

 

Preparation

Clean the sardines by removing the guts, heads, and backbone; split them into two fillets. Keep them in the fridge...
In a pan with 2 tablespoons of oil, sauté the finely chopped garlic and onion. When they turn translucent, add the tomatoes and sugar, then let it simmer on low heat for about 40 minutes.
Before taking it off the heat, add salt and the chopped parsley. Set aside...
To make the dough: In a bowl, dissolve the yeast in the lukewarm water; add the flour, salt, and oil. Knead until the dough comes away from your hands and forms a ball. Place it in an oiled bowl, cover with plastic wrap, and let it rest for 1 hour...
This is what the dough looks like after an hour...
Turn it out onto your work surface and divide it into 4 pieces, roughly equal in size...
Preheat the oven to 200°C.
Roll out each piece with a rolling pin to make 4 flatbreads; prick them all over with a fork...
Pop them in the oven and bake for just 10 minutes, only until the dough starts to turn golden...
Take them out of the oven and spread the tomato sauce over each flatbread, then arrange the sardine fillets on top (skin side up). Season with salt and pepper, then drizzle with olive oil.
Put them back in the oven at the same temperature...
and bake for another 10 minutes.
Serve them straight from the oven, with black olives and sliced tomatoes on the side.
Finish with a generous drizzle of olive oil...
