Details

Cost: €0.60 per person
Preparation time: 60 minutes plus the time to make the stock

Ingredients

for 4 people
  • 4 sweet onions (400g)
  • 200g white part of leek
  • 4 eggs
  • 50ml cognac
  • 1 tablespoon flour
  • 100g grated cream cheese
  • toasted bread
  • salt
  • extra virgin olive oil
  • 1.5 liters chicken stock, or vegetable stock

Preparation

Toast the bread slices in the oven. Set them aside.
In a pot with a good drizzle of olive oil, fry the onions and leek, everything chopped very fine...
Cook over low heat for about 20 minutes, until the onion turns translucent. Add the cognac and flambé it, then sprinkle in the flour and stir well so it gets properly fried. Pour in the stock and let it simmer for 30 minutes.
If you prefer it as a smooth cream, now's the time to blend it. I've kept mine chunky — I like finding those little bits of onion in each spoonful. Ladle the soup into individual ovenproof bowls...
Crack 1 egg into each bowl, scatter the cheese over the top, and run them under the broiler. Let it gratinée until the eggs are cooked just how you like them. Serve right away with the toasted bread tucked into the soup...

When you eat this soup, you'll find tender pieces of onion and leek mixed with the cheese, softened by the heat but not completely melted. It's absolutely delicious.

Notes

For those with celiac disease, use gluten-free bread and flour.
