Chop everything together with the parsley, then mix it well with the vinegar, olive oil, salt, and black pepper... Coat the cod fillets thoroughly with this marinade, making sure to cover both sides completely. Pop them in the fridge for at least two hours before cooking... Heat your oven to 190°C, with both top and bottom heat on. Place the cod fillets with their marinade in a baking dish and cook for 12 minutes... Enjoy!

- 180g very finely ground almonds
- 180g sugar
- 2 medium eggs
- A pinch of salt
- A pinch of vanilla sugar
- Grated lemon zest
- Whole raw almonds
Preparation
- Grind the sugar until it's fine, then mix it with the ground almonds, vanilla sugar, and lemon zest. Stir in the egg yolks.
- Beat the egg whites with the pinch of salt until you get stiff peaks — they should be lovely and glossy.
- Gently fold the beaten whites into the almond mixture. Use sweeping motions from bottom to top, and whatever you do, don't stir it roughly or the whites will deflate. Once everything's nicely combined, shape it into a ball, pop it in a bowl covered with plastic wrap, and let it rest in the fridge for 2 to 3 hours.
- About 20 minutes before you're ready to bake, preheat your oven to 220°C, with both top and bottom heat.
- Roll the dough into balls of about 20g each. Press a whole almond on top of each one, then bake until they turn a light golden color. The trick is to keep them soft inside — that's where the magic happens.
