Fresh Cod Marinated and Baked

ingredients for 4 people 4 boneless cod loin fillets. 2 shallots. 2 garlic cloves. chopped parsley. 150cc extra virgin olive oil. 1 tablespoon caramel vinegar. salt and freshly ground black pepper. preparation Start by peeling the shallots and garlic cloves. Chop everything together with the parsley, then mix it well with the vinegar, olive oil, salt, and black pepper... Coat the cod fillets thoroughly with this marinade, making sure to cover both sides completely. Pop them in the fridge for at least two hours before cooking... Heat your oven to 190°C, with both top and bottom heat on. Place the cod fillets with their marinade in a baking dish and cook for 12 minutes... Enjoy!

Coconut Panna Cotta

 


Ingredients

For six people
  • 600g coconut milk.
  • 100g heavy cream (35% fat).
  • 3 sheets of gelatin.
  • 60g sugar.
  • 1/2 teaspoon vanilla extract.

You'll also need:

  • Fresh or frozen raspberries.
  • 6 ramekins or flan molds.
  • Simple syrup for greasing (40g water and 40g sugar).

Preparation

Start with the simple syrup. Put the sugar and water in a small saucepan over medium heat. Once it comes to a boil and the sugar dissolves completely, take it off the heat. Let it cool down, then brush a thin layer inside each ramekin — this helps when you want to unmold them later.
Get your gelatin sheets soaking in a bowl of cold water while you work on the next step.
In another pot, warm the cream and sugar together. Keep stirring gently until the sugar melts. Remove from the heat, squeeze out the gelatin sheets well, and stir them into the warm cream until they dissolve completely.
Now add the coconut milk and vanilla extract, mixing everything together until it's smooth.
Pour the mixture into your six ramekins, dividing it evenly.
Pop them in the fridge for at least 4 hours — overnight works even better if you have the time.
When you're ready to serve, top each one with two or three fresh raspberries.
