ingredients
for 4 people- 3 chicken breasts, butterflied.
- 50g Iberian ham, sliced very thin.
- 150ml orange juice.
- 2 oranges.
- cherry tomatoes.
- 1/2 leek.
- 1 onion.
- 1 carrot.
- 1 large ripe tomato.
- 1 tablespoon flour.
- 150ml dry white wine.
- 1/2 liter chicken stock.
- 3 tablespoons balsamic vinegar.
- 1 tablespoon sugar.
- salt.
- plenty of black pepper.
- extra virgin olive oil.
preparation
Put the vinegar and sugar in a small pot over the heat. When it starts to caramelize, add the orange juice, wine, and stock (don't add all the stock at once—keep some back in case you need it later). Let this cook for 10 minutes over high heat, uncovered, so it reduces down nicely. Set it aside.Meanwhile, peel the onion, leek, and carrot. Chop everything into chunks and fry them in a deep pan or skillet with 2 or 3 tablespoons of oil...
Once the vegetables start to soften and turn golden, stir in a tablespoon of flour. Give it a good stir with your spatula so the raw flour taste cooks off, then add the peeled and chopped tomato along with that wine and orange juice reduction you set aside earlier.
Let everything simmer gently over low heat with the lid on for 20 minutes. Keep an eye on it so nothing sticks to the bottom.
Now pass the sauce through a fine-mesh strainer and pour it back into the pan. Add the ham, cut into pieces. If the sauce looks a bit thin, add more of that reserved stock...
Heat up your griddle or grill pan without any oil. Sear the tomatoes (cut in half) and the oranges (peeled and sliced into rounds) until they get those nice charred marks.
Season the chicken breasts with salt and pepper, then cook them on the griddle with just a few drops of oil.
Serve it all on individual plates—chicken topped with the ham and that gorgeous hot sauce, with the grilled orange slices and tomatoes on the side...
Enjoy!
