ingredients for 4 people 4 boneless cod loin fillets. 2 shallots. 2 garlic cloves. chopped parsley. 150cc extra virgin olive oil. 1 tablespoon caramel vinegar. salt and freshly ground black pepper. preparation Start by peeling the shallots and garlic cloves. Chop everything together with the parsley, then mix it well with the vinegar, olive oil, salt, and black pepper... Coat the cod fillets thoroughly with this marinade, making sure to cover both sides completely. Pop them in the fridge for at least two hours before cooking... Heat your oven to 190°C, with both top and bottom heat on. Place the cod fillets with their marinade in a baking dish and cook for 12 minutes... Enjoy!

for 4 people- 750g green broccoli.
- 400g fresh sausage.
- 4 medium potatoes.
- 250g senderuelas mushrooms (or another variety if you can't find these).
- 1/2 leek.
- 1 onion.
- 2 garlic cloves.
- 1 ripe tomato.
- 150ml dry white wine.
- salt.
- extra virgin olive oil.
- 100g grated creamy cheese.
for the béchamel:
- 800ml milk.
- 50g butter.
- 1 tablespoon extra virgin olive oil.
- 100g flour.
- salt.

Start by cleaning the mushrooms...Peel the potatoes and slice them into rounds that aren't too thick...
Boil them in salted water for about 12 to 15 minutes, until they're cooked through but still holding their shape.
In a separate pot with salted water, cook the broccoli cut into small florets. When it's tender, take it off the heat and drain well.
In a casserole with a splash of oil, fry the sausage. Once it's cooked, chop it into small pieces.
Set the meat aside and in that same oil, sauté the onion, garlic, and leek, all finely chopped. When they turn translucent, add the mushrooms and let them cook for a few minutes. These little ones cook quickly, so keep an eye on them.
Next, pour in the wine and let it bubble away. Then add the peeled, grated tomato. After a couple of minutes, return the reserved sausage to the pan and give everything a good stir to bring it all together. Set this aside.
Arrange the potato slices in the bottom of an oven-safe dish, then spread half of the sausage mixture on top...
Now layer on the broccoli...
And then the rest of the sausage mixture...

Sprinkle the grated cheese over everything...
Pop it in the oven to gratinate until golden and bubbling, and then dig into this hearty dish...
