Brioche Buns Filled with Custard Cream

In case you haven't thought about what to make for an afternoon snack, here are some sweet little brioche buns!

Details

Cost: €1.50 for 8 pieces
Prep time: 50 minutes, not counting rising times

 Ingredients

for 8 buns
  • 2 whole eggs.
  • 30g sugar.
  • 60g butter at room temperature.
  • 80g whole milk.
  • 30g instant mashed potato flakes.
  • 1 tsp salt.
  • 10g fresh yeast.
  • 250g bread flour.

for the custard cream:

  • 1/4 liter whole milk.
  •  80g sugar.
  • 3 egg yolks.
  • 25g cornstarch.

for decorating:

  • 1 beaten egg to brush the buns.
  • powdered sugar for dusting.

Preparation

Dissolve the yeast in the milk. Put it together with all the ingredients from the first section into the bowl of your stand mixer or food processor (you can also do this by hand if you prefer). Mix on low speed until the flour is incorporated, then turn it up to high and knead for 10 minutes.
Turn the dough out onto a lightly floured work surface and shape it into a ball with your hands...
Place it in a bowl greased with olive oil, cover with plastic wrap, and let it rise at room temperature until it doubles in size. This usually takes one to two hours, depending on how warm your kitchen is...
Once the dough has risen, divide it into portions. I made 8 buns at 80g each. Shape them and place on a baking sheet lined with parchment paper. Cover the tray with plastic wrap, oiled on the side that touches the dough, and let them rise for another 40 to 50 minutes...
Preheat your oven to 180°C. Brush the buns with the beaten egg, pop them in the oven, and bake until they're nicely golden...
Let them cool completely.
You can eat them plain or fill them with whipped cream or custard. If you'd like the recipe for the custard cream, you'll find it here.

Happy baking!
