Pork Ribs and Sausage Platter

I can't quite put into words the taste and aroma of this stew. If only photographs could carry scent. Ingredients For 4 people 3 pork ribs. 600g fresh pork sausage. A handful of pine nuts. Pitted dried prunes. Dried apricots. 1/2 kg peeled chestnuts. 1 tablespoon cornstarch. 1 teaspoon sugar. 10g dark chocolate. Salt. Olive oil. Vegetable stock. Preparation At the butcher, ask them to cut each rib into three pieces. Cut the sausage into chunks about 6cm long. Put the prunes and apricots to soften in boiling water. In a pot with hot oil, brown the rib pieces and sausage chunks. Once they're nicely golden, add the prunes, chestnuts, apricots, pine nuts, sugar, and chocolate, then cover everything with vegetable stock. If you don't have any, just use water. Cover the pot and let it cook for about 45 minutes. Every now and then, give the pot a good shake. Dissolve the cornstarch in a bit of water and stir it into the sauce, then cook for another...

Braised Artichokes and Potatoes

Artichokes and potatoes — two absolute stars of our local cooking!

Ingredients

for 4 people
  • 4 artichokes
  • 4 large potatoes
  • 20 black olives with pits
  • 1 red onion
  • 4 small, ripe tomatoes
  • chopped parsley
  • salt
  • plenty of black pepper
  • 4 tablespoons extra virgin olive oil

Preparation

Peel the tomatoes, remove the seeds, and cut them into quarters.
Peel the potatoes, rinse them well, and chop into cubes.
Trim away the tougher outer leaves from the artichokes, cut them into quarters, and keep them in a bowl of cold water with a good handful of parsley to stop them from turning dark.
Heat your pot with the olive oil and sauté the onion, roughly chopped, for about 2 minutes. Then toss in the potatoes and cook for another 2 minutes, stirring with a wooden spoon.
Next, add the drained artichokes, the peeled and halved tomatoes, the olives, and the parsley. Season with salt and plenty of pepper, then let everything cook together for 5 or 6 minutes, stirring now and then.
Cover with hot water...
and let it simmer gently over medium-low heat with the lid on for 25 to 30 minutes. Don't stir it — just give the pot a shake every so often to keep things from sticking. Taste for salt, then take it off the heat...
Serve it up nice and hot...

Enjoy!
