Fresh Cod Marinated and Baked

ingredients for 4 people 4 boneless cod loin fillets. 2 shallots. 2 garlic cloves. chopped parsley. 150cc extra virgin olive oil. 1 tablespoon caramel vinegar. salt and freshly ground black pepper. preparation Start by peeling the shallots and garlic cloves. Chop everything together with the parsley, then mix it well with the vinegar, olive oil, salt, and black pepper... Coat the cod fillets thoroughly with this marinade, making sure to cover both sides completely. Pop them in the fridge for at least two hours before cooking... Heat your oven to 190°C, with both top and bottom heat on. Place the cod fillets with their marinade in a baking dish and cook for 12 minutes... Enjoy!

Tomato, Fresh Cheese, and Parmesan Lasagna



ingredients

for 4 servings
  • 12 lasagna sheets.
  • 4 cloves of garlic.
  • 2 onions.
  • 2 leeks (white part only).
  • 8 large, ripe tomatoes.
  • 1/2 tsp. sugar.
  • 200g fresh cheese.
  • oregano.
  • 4 tablespoons extra virgin olive oil.
  • salt.
  • freshly ground black pepper.
  • 80g grated Parmesan cheese.

preparation

Peel the onions and garlic and slice them thinly.
Clean the leeks and cut them into rounds.
Wash the tomatoes and peel them, remove the seeds, and chop into small pieces.
Set a pan over the heat with the oil and sauté the onion and leek until they turn translucent. Add the tomato and a pinch of sugar.
Keep the pan on low heat, season with salt and pepper, and let it cook down until everything's beautifully caramelized — about 15 minutes or so. Just before you take it off the heat, stir in the chopped oregano.
Slice the fresh cheese into very thin pieces.
Prepare your lasagna sheets according to the package directions.
Drain them on a clean kitchen towel.
Place one sheet of pasta on each plate (I like making individual portions, but you can absolutely assemble this in a baking dish instead), then build your layers with the tomato mixture and cheese slices, alternating with the pasta.
You'll want 3 sheets per serving, finishing with a layer of the tomato mixture on top.
Sprinkle the grated Parmesan generously over everything...
Slide it into a preheated oven at 180°C and bake for 12 to 15 minutes.
Serve it straight from the oven while it's still bubbling...

Beet Salad with Zucchini, Asparagus, and Pear
