Ingredients
for 4 people- 250g bread flour.
- 150ml water.
- 15g fresh yeast.
- 20ml sunflower oil.
- 1/2 tsp salt.
Preparation
Mix the flour with the yeast, crumbling it in with your fingers, then add the water, salt, and oil. If you have a stand mixer, pour the dough into the bowl and knead for 10 minutes on speed 3.If you're doing this by hand, knead energetically until the dough is smooth and elastic.
Turn the dough out onto a lightly floured work surface and keep kneading until you have a nice ball...
Place it in a floured bowl and cover with a damp cotton cloth. Let it rest for 30 minutes.
Take it out of the bowl and knead again to punch out the air. Let it rest another 30 minutes.
After both rising periods, divide the dough into 4 equal pieces and shape them into balls.
Roll them out with a rolling pin into round flatbreads. If the dough resists, let it rest for 10 minutes before rolling again. Place them on a baking sheet dusted with flour.
Cover the tray with the damp cloth and preheat your oven to 250°C. Put a pan of water in the oven to create steam.
Bake for about 8 minutes. They're ready when they've puffed up and just start to take on a bit of color. Don't overbake them — they should stay soft and pliable, not crispy.
You can fill these with all sorts of things — lamb, chicken, pork, fish, falafel, salads, and yogurt sauce.
