Lemon Cream and Whipped Cream Cups

This is one of those desserts that looks fancy but comes together surprisingly easily!

Ingredients

for 6 servings

lemon cream:

  • 45g butter.
  • 250g sugar.
  • juice of three lemons.
  • zest of half a lemon, grated.
  • 3 whole eggs.

for the whipped cream:

  • 200g heavy cream (35% fat content).
  • 20g powdered sugar.

you'll also need:

  • Mikado cookies (optional).

Preparation

To make the lemon cream: Melt the butter in a saucepan over low heat—you just want it melted, not boiling. Take it off the heat and stir in the lemon juice, lemon zest, and sugar. Finally, add the eggs, beaten just like you would for an omelet. Set the saucepan in a bain-marie (a water bath) and stir constantly until the mixture thickens nicely. Set it aside to cool completely.
Once the cream has cooled down, divide it among your serving cups and pop them in the fridge.
Whip the heavy cream with the powdered sugar until it forms soft peaks. Keep it chilled in the fridge.
When you're ready to serve, spoon the whipped cream into a piping bag and decorate the tops of your cups with pretty swirls.
Stick a Mikado cookie into each cup and you're ready to go...
