Fresh Cod Marinated and Baked

ingredients for 4 people 4 boneless cod loin fillets. 2 shallots. 2 garlic cloves. chopped parsley. 150cc extra virgin olive oil. 1 tablespoon caramel vinegar. salt and freshly ground black pepper. preparation Start by peeling the shallots and garlic cloves. Chop everything together with the parsley, then mix it well with the vinegar, olive oil, salt, and black pepper... Coat the cod fillets thoroughly with this marinade, making sure to cover both sides completely. Pop them in the fridge for at least two hours before cooking... Heat your oven to 190°C, with both top and bottom heat on. Place the cod fillets with their marinade in a baking dish and cook for 12 minutes... Enjoy!

Butterhead Lettuce Salad with Anchovies and Parmesan



Ingredients

for 4 people
  • 1 butterhead lettuce.
  • anchovies in oil.
  • 4 hard-boiled eggs.
  • 1 bunch of green asparagus.
  • thin slices of bread (from a thin baguette).
  • 50g grated Parmesan cheese.
  • 1 tablespoon butter.
  • 2 tablespoons extra virgin olive oil.
  • 1 clove of garlic.
  • fresh parsley.

for the vinaigrette:

  • salt.
  • 6 tablespoons extra virgin olive oil.
  • 3 tablespoons balsamic vinegar.

Preparation

Boil the asparagus until just tender, then cool them down and cut into bite-sized pieces.
Fry the bread slices in the butter and oil until they turn golden and crispy. Toss in the chopped garlic and parsley...
and cook everything together for another minute or two, watching carefully so nothing burns. Take the pan off the heat and set aside...
Make the vinaigrette by whisking all the ingredients together.
To put the salad together, arrange the cleaned and torn lettuce leaves on a platter. Add the anchovies, eggs cut into quarters, asparagus pieces, and those garlicky bread slices. Drizzle with the vinaigrette and finish with a generous dusting of Parmesan over the top...
