Banana and Custard Tartlets

You've got to try these – they're absolutely delicious and surprisingly easy to make!

Ingredients

for 8 tartlets
  • 5 bananas, not too ripe.
  • butter for frying.
  • 2 sheets of puff pastry (fresh).
  • apple jelly.

for the custard

  • 3 egg yolks.
  • 300cc whole milk.
  • 20g cornstarch.
  • 100g sugar.

you'll also need

  • 8 non-stick tart tins, 10cm diameter.
  • parchment paper.

Preparation

Heat your oven to 180ºC.
Roll out the puff pastry and cut 8 circles the size of your tins. Place them in the tins and prick all over with a fork.
Cover the pastry with parchment paper and fill with dried chickpeas or baking weights to keep the pastry from puffing up too much...
Bake until the pastry turns crisp and golden brown.
For the custard, whisk together the egg yolks and cornstarch. In a separate pot, bring the milk and sugar to a boil. Once it starts bubbling, pour it over the yolk mixture while whisking constantly with a hand whisk. Return everything to the heat and keep stirring until it thickens nicely. Take it off the heat and keep whisking for another minute or two. Let it cool completely.
Peel the bananas and slice them into rounds, about 1cm thick.
Fry the slices in butter on both sides until they're golden.
Once the custard has cooled down, spoon it into the baked pastry shells and arrange the banana slices on top...
Warm the apple jelly in a bain-marie and brush it over the tartlets to give them a lovely shine.
Pop them in the fridge and serve nice and cold...

Enjoy your dessert!
