preparation
To make the dough, mix and knead all the ingredients together. Shape into a ball and let it rest in an oiled bowl for about 30 minutes.Preheat your oven to 190°C, with heat from both top and bottom.
Take the dough out of the bowl and roll it out with a rolling pin, shaping it into a coca. Place it on a baking sheet lined with parchment paper.
To prepare the filling: Roast the peppers and eggplants. Once they've cooled, peel them and cut into pieces. Set aside.
Sauté the onion, garlic, and zucchini, all chopped up.
When everything is nice and soft, add the pieces of pepper and eggplant, season with salt and pepper, and mix well.
Spread this mixture over the dough.
Wash the tomatoes and slice them very thin.
Arrange the slices over the sautéed vegetables. Sprinkle with salt, drizzle with olive oil, and dust with oregano.
Pop it in the oven and bake for 20 to 25 minutes, or until the dough turns a lovely golden color.
I hope you enjoy it!
