Check that they're cooked through, then let them cool right there in the cooking water. Once they're cool enough to handle, peel them and carefully hollow them out. You want to keep the potato shells intact, so take your time here... Take the scooped-out potato flesh and mash it smooth with a fork. Set this aside for now. In a small bowl, mix the chopped parsley with the 120cc of olive oil. Set that aside too. Now, in a deep skillet with a good glug of hot oil, brow...
ingredients
for 4 people
- 4 to 8 cod loins (depending on size).
- two zucchini.
- a bunch of fresh green asparagus.
- two carrots.
- one leek.
- salt.
- freshly ground black pepper.
- extra virgin olive oil.
preparation
Start by cleaning all the vegetables. Trim off the woody ends from the asparagus and cut them into pieces about 5 to 6 centimeters long.
Take the darkest green part of the leek and set it aside — save it for making stock another day. Slice the rest into thin rounds.
Peel the carrots and slice them thinly, along with the zucchini. You can use a mandoline for this, or just run a vegetable peeler along them to get nice thin ribbons.
Place everything in a microwave-safe glass dish. Season with salt and pepper, drizzle with olive oil...
Cover the dish with a lid or parchment paper and cook for 10 minutes...After that, nestle the cod pieces on top of the vegetables, add a pinch more pepper, cover the dish again, and cook for another 10 minutes...
Bring it straight to the table while it's still hot...
Enjoy!
