preparation
Start by boiling the potatoes — scrubbed clean but with their skins on — in salted boiling water for about 30 minutes. Check that they're cooked through, then let them cool right there in the cooking water.Once they're cool enough to handle, peel them and carefully hollow them out. You want to keep the potato shells intact, so take your time here...
Take the scooped-out potato flesh and mash it smooth with a fork. Set this aside for now.
In a small bowl, mix the chopped parsley with the 120cc of olive oil. Set that aside too.
Now, in a deep skillet with a good glug of hot oil, brown the ground meat a bit. Add the garlic and onion, both chopped small, and let everything cook together.
When the sofrito turns translucent and fragrant, pour in the wine and cognac. Keep it on the heat so the alcohol can cook off properly.
Take the pan off the burner and stir in the hard-boiled eggs — mashed with a fork — along with that reserved mashed potato.
Taste for salt and pepper, then mix everything together until it's well combined...
Stuff each potato half generously with the filling, then arrange them in a baking dish...
Drizzle that parsley oil over the top of each stuffed potato...
Sprinkle the grated cheese over everything...
Pop them under the broiler until the cheese turns golden and crispy...
Enjoy!
