Fresh Cod Marinated and Baked

ingredients for 4 people 4 boneless cod loin fillets. 2 shallots. 2 garlic cloves. chopped parsley. 150cc extra virgin olive oil. 1 tablespoon caramel vinegar. salt and freshly ground black pepper. preparation Start by peeling the shallots and garlic cloves. Chop everything together with the parsley, then mix it well with the vinegar, olive oil, salt, and black pepper... Coat the cod fillets thoroughly with this marinade, making sure to cover both sides completely. Pop them in the fridge for at least two hours before cooking... Heat your oven to 190°C, with both top and bottom heat on. Place the cod fillets with their marinade in a baking dish and cook for 12 minutes... Enjoy!

Mascarpone and Strawberry Jam Cups


A super easy dessert!



Ingredients

for 6 people
  • 250g mascarpone cream cheese.
  • 200g heavy cream for whipping (35% fat content).
  • 90g powdered sugar.
  • 1 tsp vanilla sugar.
  • strawberry jam (homemade).
  • strawberry cookies (optional).

To make the cream cheese mixture: Whip the cream (make sure it's very cold) with the powdered sugar.
Once it's nice and firm, add the vanilla sugar and the mascarpone. Keep beating with the whisk until everything is well combined. Transfer this cream into a piping bag fitted with a fluted tip.
Spoon a bit of jam into the bottom of each glass, then pipe the mascarpone cream on top, and finish with a little more jam.
Keep the glasses covered with plastic wrap in the fridge until you're ready to serve.
Right before bringing them to the table, tuck a cookie into each glass...
