Fresh Cod Marinated and Baked

ingredients for 4 people 4 boneless cod loin fillets. 2 shallots. 2 garlic cloves. chopped parsley. 150cc extra virgin olive oil. 1 tablespoon caramel vinegar. salt and freshly ground black pepper. preparation Start by peeling the shallots and garlic cloves. Chop everything together with the parsley, then mix it well with the vinegar, olive oil, salt, and black pepper... Coat the cod fillets thoroughly with this marinade, making sure to cover both sides completely. Pop them in the fridge for at least two hours before cooking... Heat your oven to 190°C, with both top and bottom heat on. Place the cod fillets with their marinade in a baking dish and cook for 12 minutes... Enjoy!

Eggplant Rolls





When the warm weather starts, what really helps is being able to prepare lunch ahead of time. This dish only needs 15 minutes in the oven right before serving.


Ingredients

for 4 people
  • 1 large eggplant or 2 medium ones
  • 1 onion
  • 2 garlic cloves
  • 1/2 kg. ground meat (pork, beef, chicken, or a mix)
  • 1 egg white
  • salt
  • pepper (optional)
  • olive oil
  • 1/2 kg. ripe tomatoes
  • 1 tablespoon sugar
  • 1 tablespoon grated Parmesan cheese

Preparation

Wash and slice the eggplant lengthwise into slices about 1 cm thick. Salt the slices and let them rest for about 30 minutes.
In a pan with a bit of oil, fry the ground meat, add salt, and once it's cooked through, remove from the heat. Set aside.
In the same oil, fry the onion and garlic, both finely chopped. When they're cooked, add the reserved meat back in and mix well.
Rinse the eggplant slices under running water and pat them dry. Beat the egg white and brush each slice with it, then fry them on both sides.
Place 2 tablespoons of the meat mixture on each eggplant slice and roll them up.
Secure each roll with one or two toothpicks so they don't come undone.
Wash, peel, and blend the tomatoes. Add the sugar, salt, and oil. Pour the blended tomato into a baking dish and place the eggplant rolls on top.
Sprinkle the grated cheese on top and bake at 200°C for about 15 minutes.
Remove the toothpicks and serve.
