Preparation
Grease your baking pan with butter and line it with parchment paper.
Boil the potatoes with their skins on. Once cooked, peel them and mash them well using a potato masher or fork. Keep the mash warm while you work.
Beat the eggs together with the pinch of salt and the sugar. Add the lard, the warm potato mash, and the yeast, then keep beating until everything is well combined.

Pour the batter into your prepared pan, cover it with plastic wrap, and let it rest in the refrigerator overnight.
Meanwhile, preheat your oven to 170°C with heat from both top and bottom.

Once it's completely cool, dust generously with powdered sugar.
