No-Bake Oreo Cheesecake

ingredients for the base: 160g crushed Oreo cookies. 80g softened butter. for the filling: 250g Philadelphia cream cheese. 1 Greek yogurt (like Oikos). 70g walnuts (shelled). 80g brown sugar. 50g melted butter. 1 teaspoon vanilla extract. 80g milk. 4 sheets unflavored gelatin. 120g Oreo cookies, roughly chopped. you'll also need: mixed berries (strawberries, raspberries, etc.). whole Oreo cookies. 250g strawberry jam. a 16cm diameter cake ring.   preparation To make the cake base : Crush the Oreo cookies and mix them with the softened butter. Once everything is well combined, press the mixture into the cake ring, which you've placed on the serving plate you'll use for the finished cake. Make sure to press it down firmly so you get a nice, smooth base. Pop it in the fridge while you work on the next step. Soak the gelatin sheets in cold water until they're soft. Oven-Baked River Trout with Vegetables





Ingredients

for 5 people
  • 5 river trout (cleaned and without heads or bones).
  • 5 thin slices of lean bacon (without rind).
  • flour for dusting.
  • 5 potatoes.
  • 1 red bell pepper.
  • 1 zucchini.
  • 4 spring onions.
  • salt.
  • plenty of black pepper.
  • extra virgin olive oil.
  • 300cc vegetable broth.

Preparation

Stuff each trout with a slice of bacon.
Dust them with flour and fry in a pan with good hot oil. Season with salt and pepper, then lift them out and set aside.
Preheat your oven to 190°C, with heat from top and bottom.
Pour a generous glug of oil into a shallow casserole dish (one that can go in the oven).
Peel the potatoes and slice them into thick rounds, then lay them in the casserole.
Cut the vegetables into rounds or sticks and arrange them on top of the potatoes...
Slide the uncovered casserole into the oven and bake for 20 to 25 minutes, stirring now and then so everything cooks evenly. Be gentle so the vegetables don't fall apart. Add salt to taste...
Pour in the broth, cover the casserole, and bake for another 10 minutes.
A few minutes before you're ready to serve, nestle the fried trout on top of the vegetables and let them warm through...
