Lemon Ice Cream

A refreshing and digestive lemon ice cream that's perfect for hot summer days! Details Cost: €0.30 per person Prep time: 25 minutes Ingredients for 4 people 200g heavy cream. 1 Greek yogurt. zest of 1 lemon. 100g powdered sugar. 50ml lemon juice. Preparation Start by zesting one lemon. Then squeeze 1 or 1½ lemons until you have 50ml of juice. Whip the cream with the 100g of powdered sugar, then add the lemon zest and Greek yogurt, continuing to beat until everything is well combined. Slowly fold in the lemon juice using a spatula, being gentle so you don't deflate the cream. Pour the mixture into a bowl and place it in the freezer. After about an hour and a half, take it out and beat it again to break up any ice crystals. Return it to the freezer for at least 12 hours before serving. You can serve the ice cream in scoops in a glass or sliced...    Enjoy!

Mushroom and Meat Burgers


It's your classic burger, but with mushrooms mixed right into the meat!




Ingredients

for 4 people
  • 600g ground meat (pork and beef mixed).
  • 1 whole egg.
  • 100g leek (white part only).
  • 100g mushrooms.
  • 1 whole egg.
  • salt.
  • freshly ground black pepper.
  • extra virgin olive oil.
  • salt.

to serve alongside

  • 1 zucchini.
  • artichokes.

Preparation

Chop the leek and mushrooms into very small pieces...
and fry them in a pan with two tablespoons of oil. Let them cool for a few minutes, then mix with the meat. Add the egg and season with salt and pepper...
Knead everything together well and let it rest in the fridge for about 6 to 8 hours — honestly, it's best if you do this the day before.
The next day, use a cookie cutter or ring mold to shape the burgers and keep them chilled until you're ready to cook.
Peel the artichokes, cut them in half, and put them in a bowl with a bit of water, salt, and olive oil. Cover the bowl and microwave them for 5 minutes on high.
Do the same with the zucchini, sliced into rounds.
Grill the artichokes and zucchini on a hot griddle. Finally, cook the burgers and serve piping hot, straight off the grill...

Beet Salad with Zucchini, Asparagus, and Pear
