Ingredients For 3 people 500g four-cheese tortellini (fresh pasta). 350g fresh spinach. 300g peeled prawns. A handful of raw pine nuts. 1 spring onion. 4 tender garlic cloves, chopped. 5 sun-dried tomatoes in olive oil. 125ml evaporated milk. Freshly ground black pepper. Salt. Extra virgin olive oil. Preparation Wash the spinach, blanch it in salted boiling water, then cool it down quickly under cold water so it keeps that lovely bright green color. Chop it into small pieces, squeeze out any excess water, and set aside. Toast the pine nuts in a dry pan without any oil. Set them aside once they're golden. Season the prawns with salt and pepper, then fry them in a bit of oil for about a minute on each side. Take them off the heat and set aside. In the same pan, adding a bit more oil if needed, sauté the onion, chopped very fine. When it turns transparent, add the spinach and tender garlic. After three or four minutes, toss in the chopped sun-dried tomatoes. Cook for another 2 or 3 mi...
This omelet is delicious, and you don't need to have any allergies to enjoy it. It's nourishing, full of fiber, and I've made it without frying the potato and onion — if you're watching what you eat, take note.
You can make this with different ingredients like spinach, prawns, asparagus, artichoke — whatever your imagination suggests.
Ingredients
- 3 medium potatoes.
- 1 small onion.
- 60g chickpea flour (you can find it at health food stores, or I made mine using a Thermomix).
- 100ml water.
- Salt and olive oil.
Preparation
- In a bowl, add a bit of water, the potatoes (cleaned and peeled) cut into small slices, and the onion finely chopped. Season with oil and salt. Set aside.
- Cover the bowl with a glass lid or plastic wrap. Microwave on full power for 9 minutes. Keep in mind you'll need to increase the time if you're using more potato.
- In another bowl, put the chickpea flour and gradually pour in the water, whisking with a hand whisk. It should be thicker than beaten egg would be. Add salt.
- Mix in the cooked potato and onion, pour some oil into a pan, and when it's nice and hot, make the omelet just as you would with eggs. Lower the heat so it cooks through properly.
Notes
You don't have to use the microwave — you can fry the onion and potato if you prefer, though honestly, there isn't that much difference. You can make this with different ingredients like spinach, prawns, asparagus, artichoke — whatever your imagination suggests.
