Method Drain the broad beans in a colander to remove all the oil, but save 2 or 3 tablespoons for later. To make the mi-cuit, follow the recipe here . Heat a splash of oil in a pan and sauté the shallot along with the cleaned, chopped artichokes. Season with salt. A couple of minutes before you take it off the heat, toss in the beans and let everything finish cooking together. Set aside to cool. For the poached eggs — you can see how it's done in the photos (in one shot, the yolk might look broken, but that's just the reflection on the plastic wrap; it should stay whole) — lay a piece of plastic wrap over a small cup, drizzle on a few drops of oil, crack the egg into the center, add a pinch of salt, twist the plastic wrap cl...
A fancy dessert that's actually simple to make!
Ingredients
for 6 servings- 1 rectangular sheet of puff pastry.
- 1 egg yolk.
- 1 tablespoon milk.
for the filling:
- 700g apples.
- 150g sugar.
- 1 tablespoon rum.
- 2 tablespoons water.
- 80g raisins.
- 80g walnuts (shelled).
- 2 tablespoons pine nuts.
- a pinch of cinnamon.
- 1 teaspoon vanilla sugar.
Preparation
To make the filling, grab a microwave-safe bowl (glass works best) and toss in the apples cut into small cubes, vanilla sugar, cinnamon, raisins, sugar, rum, and water.Cover the bowl and pop it in the microwave for 6 minutes at full power. Then let it cool completely in the fridge.
Once it's nice and cold, drain off all the juice thoroughly.
Preheat your oven to 180°C.
Roll out the puff pastry and picture it divided into three sections lengthwise (but don't actually cut it yet). As you can see in the photo, I've made diagonal cuts on each side, leaving the center strip intact for the filling.
Now fold the pastry strips over the filling, alternating from side to side to create a braided effect.
Brush the pastry with the egg yolk beaten together with the tablespoon of milk, then slide it into the oven. Bake until the pastry turns a beautiful golden brown.
Now sit back and enjoy this lovely dessert!
