Today's a one-dish meal kind of day: vegetarian macaroni! Ingredients for 6 people 600g ridged macaroni. 250g sliced mushrooms. 1 zucchini, cut into sticks. 2 medium spring onions, sliced into rounds. 1 leek (white part only), cut into sticks. 300ml heavy cream. 100g grated cheese for gratin. salt. plenty of black pepper. olive oil. Preparation In a large pan with a bit of olive oil, sauté the onion and leek until they start to soften... toss in the zucchini... and finally the mushrooms. Season with salt and pepper. Meanwhile, cook the pasta according to package directions, drain well, and add it straight to the pan. Let everything cook together for about 4 to 5 minutes so the flavors can mingle... pour in the cream and scatter the grated cheese generously over the top... slide it under the broiler until the top turns golden and bubbly, then serve it up hot... - 500g flour.
- 125g extra virgin olive oil.
- 125g beer.
- 125g water.
- 1 tsp yeast.
- 1/2 tsp salt.
for the topping
- 1 leek.
- 2 spring onions.
- 1 zucchini.
- 200g mushrooms.
- small tomatoes.
- oregano.
- salt.
- extra virgin olive oil.
Preparation
Mix and knead together all the dough ingredients. Shape into a ball and let it rest in an oiled bowl for about 30 minutes.Meanwhile, heat 2 tablespoons of olive oil in a pan and sauté the onion sliced into rounds and the leek cut into sticks.
After about two minutes, add the zucchini.
Once the vegetables start turning soft and translucent, toss in the sliced mushrooms, season with salt, and cook until everything is tender.
Preheat your oven to 180°C.
Turn the dough out onto an oiled work surface and roll it out with a rolling pin, shaping it into a square or rectangular flatbread.
Spread the sautéed vegetables over the top, arrange the halved cherry tomatoes cut-side up, and sprinkle with oregano.
Bake for 20 to 30 minutes, until the dough is cooked through and starting to turn golden at the edges.
