Today's a one-dish meal kind of day: vegetarian macaroni!
Ingredients
for 6 people- 600g ridged macaroni.
- 250g sliced mushrooms.
- 1 zucchini, cut into sticks.
- 2 medium spring onions, sliced into rounds.
- 1 leek (white part only), cut into sticks.
- 300ml heavy cream.
- 100g grated cheese for gratin.
- salt.
- plenty of black pepper.
- olive oil.
Preparation
In a large pan with a bit of olive oil, sauté the onion and leek until they start to soften...toss in the zucchini...
and finally the mushrooms. Season with salt and pepper.
Meanwhile, cook the pasta according to package directions, drain well, and add it straight to the pan. Let everything cook together for about 4 to 5 minutes so the flavors can mingle...
pour in the cream and scatter the grated cheese generously over the top...
slide it under the broiler until the top turns golden and bubbly, then serve it up hot...
