Banana Mousse Cups

A lovely banana dessert that's light and refreshing! Ingredients for 6 servings 3 bananas. 3 egg whites. 1 pinch of salt. 250g heavy cream. 140g powdered sugar. juice of half a lemon. 1 tsp grated lemon zest. 1 tsp vanilla sugar. you'll also need: 150g chocolate muesli (chocolate cereal). 35g soft unsalted butter. 2 tablespoons crushed strawberry jam. sugar. 6 wide-mouth glasses or dessert cups. Preparation Beat the egg whites with the pinch of salt until stiff peaks form. Once they're nice and firm, add the powdered sugar in two batches, continuing to beat until glossy peaks appear. Whip the cream until it's halfway there—soft peaks—and set aside. Salmon and Pineapple Pasta Salad


This salad is guaranteed to wake up your appetite!





Ingredients

For 4 people
  • 1/2 fresh pineapple.
  • 1 bunch of lettuce (or mixed greens).
  • 200g marinated salmon.
  • Fresh cheese.
  • 300g dried pasta.

For marinating the salmon

  • 2 salmon fillets, boneless.
  • 3 cups of salt.
  • 1.5 cups of sugar.
  • 1 spring onion.
  • 1 clove of garlic.
  • Olive oil.
  • Plenty of ground black pepper.
  • 1 tablespoon of lemon juice.
  • Chopped parsley.
  • A pinch of Provençal herbs.
The amounts listed for marinating are more than you'll need for this salad—feel free to cut them down and make less.

Preparation

Marinate the salmon, slice it into fillets, and set aside. You'll find the full recipe here. This is something you can do ahead of time and keep in the fridge until you're ready...
Peel the pineapple, remove the tough core from the center, and slice it into thin rounds.
Boil the pasta according to the package directions. Rinse it under cold water and set it aside.
Using a round pastry cutter, cut out as many rounds of fresh cheese as you have pineapple slices. Dice the leftover cheese into small cubes.
Toss the pasta with the salmon (cut into thin strips), the lettuce (chopped fine), and the pineapple and cheese scraps.
Arrange the pineapple slices on the bottom of your serving platter with the cheese rounds on top. Pile the pasta mixture in the center.
Drizzle everything with the oil from marinating the salmon, then pop it in the fridge until you're ready to serve...
