Vegetable Mille-Feuille

ingredients for 4 people 2 large potatoes. 1 carrot. 1 zucchini. 1/2 red bell pepper. 180cc heavy cream (cooking cream). salt. extra virgin olive oil. freshly ground black pepper (optional). 80gr grated mozzarella cheese. 1 tablespoon grated Parmesan cheese. preparation Rinse your vegetables well under cold water. Slice the red pepper into thin strips...   Then slice the zucchini, carrot (peeled), and potatoes (also peeled) very thin — paper-thin if you can manage it. Or, if you've got a mandoline like I do, use the spiral attachment to make those lovely ribbon curls... Get your oven going at 200°C (about 400°F). Drizzle a little olive oil across the bottom of an oven-safe baking dish. Lay down half of your potato spirals first, then tuck in all those red pepper strips. Banana Mousse Cups




A lovely banana dessert that's light and refreshing!


Ingredients

for 6 servings
  • 3 bananas.
  • 3 egg whites.
  • 1 pinch of salt.
  • 250g heavy cream.
  • 140g powdered sugar.
  • juice of half a lemon.
  • 1 tsp grated lemon zest.
  • 1 tsp vanilla sugar.

you'll also need:

  • 150g chocolate muesli (chocolate cereal).
  • 35g soft unsalted butter.
  • 2 tablespoons crushed strawberry jam.
  • sugar.
  • 6 wide-mouth glasses or dessert cups.

Preparation

Beat the egg whites with the pinch of salt until stiff peaks form. Once they're nice and firm, add the powdered sugar in two batches, continuing to beat until glossy peaks appear.
Whip the cream until it's halfway there—soft peaks—and set aside.
Peel the bananas and cut them into chunks, then mash with a fork while mixing in the vanilla sugar, lemon juice, and grated lemon zest.
First, fold in the semi-whipped cream.
Then gently fold in the beaten egg whites—put away your electric mixer for this part. Use a spatula and fold carefully so the whites don't deflate. Set aside in the fridge until you're ready to serve.
Crush the muesli into small bits and mix it with the softened butter.
Dab the rim of each glass with a bit of strawberry jam, then dip them in sugar to create a sweet, sparkly edge.
To assemble the cups, spoon two tablespoons of the crushed muesli mixture into the bottom of each glass.
Top with the banana mousse and finish with a sprinkle of crushed muesli for a bit of crunch.

Beet Salad with Zucchini, Asparagus, and Pear
