Three-Color Roasted Pepper Terrine

The warm weather's here, which means it's time for salads and fresh dishes! Ingredients for 8 people yellow pepper mousse: 150g roasted yellow pepper. 120ml heavy cream. 2 whole eggs. salt. freshly ground black pepper. red pepper mousse: 150g roasted red pepper. same ingredients as the yellow pepper mousse above. green pepper mousse: 150g roasted green pepper. same ingredients as before. you'll also need: 1 rectangular glass loaf pan (24x12cm). olive oil for greasing the pan. parchment paper. cherry tomatoes and lettuce greens. Rice Salad with Mussels



ingredients

for 4 people
  • 240g Basmati rice.
  • 1kg fresh rock mussels.
  • one or two sweet onions.
  • 4 or 5 salad tomatoes (really fresh and firm ones).

for the dressing:

  • two tablespoons of the mussel cooking water.
  • oregano.
  • 8 tablespoons extra virgin olive oil.
  • one tablespoon balsamic vinegar.
  • salt.
  • plenty of black pepper.

preparation

An hour before you start, peel the onions and cut them into large chunks.
Put them in a bowl, cover with cold water, wrap with plastic film and keep them in the fridge.
Cook the rice following the package instructions, drain well and let it cool down completely.
Chop the tomatoes into small pieces, season with salt and place them in a colander so they can release their excess water.
Steam open the mussels, then strain the cooking liquid through a cheesecloth or fine cotton cloth and set it aside.
Remove both shells from the mussels and let them cool.
Make the vinaigrette by mixing the olive oil, vinegar and two tablespoons of the reserved mussel water, season with salt and pepper, and add a pinch of oregano.
In a large bowl, toss together the rice, tomatoes, drained onion and mussels. Dress with the vinaigrette and bring it to the table.
