Here's a recipe that makes for a wonderful breakfast treat — perfect when you want something a bit special to start the day. Ingredients for 6 servings 350g raw pumpkin (peeled and deseeded). 1 tablespoon extra virgin olive oil. 2 whole eggs. 120g cake flour. 100g rice flour. 180g sugar. 100g unsalted butter, melted in a double boiler. juice of 1 mandarin (or half an orange). 1 packet baking powder (Royal brand). a pinch of black pepper. 1/2 tsp ground cinnamon. 1/2 tsp vanilla powder. 1 pinch of salt. you'll also need: 1 loaf pan, 25x10cm. butter for greasing the pan. a rectangle of parchment paper. 150g walnuts (shelled). icing sugar for dusting. Ingredients
- 1 kg potatoes.
- 150 gr almond milk or soy milk.
- 50 gr cured ham.
- 25 gr butter.
- 4 heaping tablespoons cornstarch.
- 1 teaspoon baking powder (gluten-free).
- Salt.
- Oil for frying.
Preparation
- Wash the potatoes and boil them unpeeled in cold salted water for 30 minutes. Check they're cooked through by poking a toothpick into them.
- Peel the potatoes and pass them through a potato ricer along with the butter. Add the ham, chopped very fine, and the cornstarch dissolved in the milk. Taste for salt, though you won't need much since the ham brings its own.
- Mix the dough well. Let it cool down, then keep it in the fridge until you're ready to fry.
- Using two spoons, shape the fritters and fry them in very hot oil. Set the fritters on a tray lined with paper towels to soak up the extra oil.
Notes
Don't make the mash with an electric mixer, it doesn't work well. If you don't have a potato ricer, just mash the potatoes with a fork until smooth.The amount of ham is up to you.
