Tiramisu and Plum Cup

  Ingredients For 6 people For the tiramisu: 250g mascarpone cheese. 1 tablespoon rum (optional). 2 egg yolks. 120g sugar. 200g whipped cream with two tablespoons of icing sugar. For the fruit base: 380g plums, peeled and pitted. 1 tablespoon lemon juice. 80g sugar. 80g water. You'll also need: Ladyfinger biscuits, or magdalenas, or sponge cake. Fresh or frozen raspberries.   Preparation To make the plum compote : Put the plums, peeled, pitted, and cut into small pieces, in a saucepan over heat with the 80g of water, lemon juice, and 80g of sugar. Cook for two minutes, remove from heat, strain, and set aside the pulp and juice separately. Mix the tablespoon of rum into the juice (if you're using it). To make the tiramisu : Beat the two egg yolks with the 120g of sugar and cook in a double boiler for 8 minutes, counting from when the water starts to boil. Gluten-Free Yogurt Cake





This is the same yogurt cake I shared a few days ago, but made with gluten-free flour this time. I promise it turns out just as good.

Ingredients

  • 500g Schär Mix Dolci gluten-free flour.
  • 4 whole eggs.
  • 1 plain yogurt.
  • 600g sugar.
  • 500g milk.
  • 250g olive oil.
  • Grated zest of 1 lemon.
  • 3 packets of Bioreal Bio-Backpulver baking powder.
  • Extra sugar for sprinkling on top.

Preparation

  1. Using an electric mixer, beat the eggs, sugar, and lemon zest until the mixture doubles in volume.
  2. Add the yogurt, milk, and oil, and keep beating. Sift the flour and baking powder together, then gradually fold them into the batter until everything is well combined.
  3. Line a baking tray with parchment paper and pour in the batter. Sprinkle sugar over the top.
  4. Bake in a preheated oven at 180°C for 40 to 50 minutes.

Time: 15 minutes + baking time

Notes

Since this batter stays quite runny, it helps to put the cake in the oven for 2 minutes before sprinkling the sugar on top. This creates a thin layer that can hold the sugar better.
You can also use Hacendado baking powder, which is gluten-free.

Beet Salad with Zucchini, Asparagus, and Pear

ingredients for 4 people 1 bunch of green asparagus. 2 medium zucchini. 2 pears, unpeeled. 1 or 2 ripe tomatoes. cooked black beans (or white beans work too). small chunks of cheese (whatever you fancy). toasted sliced almonds. for the dressing: juice of 1/2 lemon. freshly ground black pepper. salt. 1 tsp honey. 6 tablespoons extra virgin olive oil. preparation Start by making your dressing.
