Here's a recipe that makes for a wonderful breakfast treat — perfect when you want something a bit special to start the day. Ingredients for 6 servings 350g raw pumpkin (peeled and deseeded). 1 tablespoon extra virgin olive oil. 2 whole eggs. 120g cake flour. 100g rice flour. 180g sugar. 100g unsalted butter, melted in a double boiler. juice of 1 mandarin (or half an orange). 1 packet baking powder (Royal brand). a pinch of black pepper. 1/2 tsp ground cinnamon. 1/2 tsp vanilla powder. 1 pinch of salt. you'll also need: 1 loaf pan, 25x10cm. butter for greasing the pan. a rectangle of parchment paper. 150g walnuts (shelled). icing sugar for dusting. - 400g cream cheese (I use Philadelphia).
- 200g sugar.
- 3 whole eggs.
- Grated lemon zest.
- 160g heavy cream (35% fat).
- 150g cornstarch.
- 1 tsp. baking powder.
- 4 apples (Golden, Fuji, or your favorite).
- Lemon juice.
you'll also need:
- A 24x20cm baking pan (with a solid, non-removable base).
- Parchment paper for the bottom.
- Butter for greasing.
- Powdered sugar for dusting.
- Fresh strawberries for garnish (optional).
preparation
Grease your pan with butter and press the parchment paper onto the base...Preheat your oven to 180°C (350°F), with heat from top and bottom.
Peel the apples and remove the cores.
Slice them very thin and toss them in the lemon juice so they don't turn brown.
Arrange the slices in the prepared pan...
Beat the whole eggs with the sugar. Add the cream cheese (I like to mash it with a fork first), the lemon zest, the heavy cream, and finally fold in the cornstarch with the baking powder.
Pour this batter into the pan, right over the apple slices...
Bake for about 45 minutes.
Take it out of the oven and let it cool completely before you turn it out of the pan.
Just before serving, dust it generously with powdered sugar...
