for 4 people (28cm diameter pan)- 1 round sheet of puff pastry.
- 120g Gruyere cheese.
- 65g Havarti cheese.
- 120g Idiazabal cheese.
- 3 whole eggs, beaten.
- 200ml heavy cream.
- 1 tablespoon chopped fresh parsley leaves.
Preparation
Roll out the puff pastry and place it in your pan, which you've lined with parchment paper. Prick the pastry all over with a fork and pop it in the fridge while you prepare the filling.Preheat your oven to 180°C.
Grate all three cheeses and mix them together with the eggs, cream, and parsley until everything's well combined. Pour this mixture into the pan, right over the puff pastry base.
Slide it into the oven and bake for 30 to 35 minutes, until the top turns a lovely golden brown. Take it out and let it cool slightly before removing it from the pan.
This quiche tastes wonderful whether you serve it warm from the oven or cold the next day.
