Here's a recipe that makes for a wonderful breakfast treat — perfect when you want something a bit special to start the day. Ingredients for 6 servings 350g raw pumpkin (peeled and deseeded). 1 tablespoon extra virgin olive oil. 2 whole eggs. 120g cake flour. 100g rice flour. 180g sugar. 100g unsalted butter, melted in a double boiler. juice of 1 mandarin (or half an orange). 1 packet baking powder (Royal brand). a pinch of black pepper. 1/2 tsp ground cinnamon. 1/2 tsp vanilla powder. 1 pinch of salt. you'll also need: 1 loaf pan, 25x10cm. butter for greasing the pan. a rectangle of parchment paper. 150g walnuts (shelled). icing sugar for dusting. - 400g home-cooked ganxet beans.
- 300g desalted salt cod, flaked.
- 1 red bell pepper.
- 1 sweet onion from Figueres.
- chopped parsley.
- 100cc extra virgin olive oil.
- 50cc white wine vinegar.
- sweet paprika.
- salt.
- cherry tomatoes.
preparation
Start by mixing the flaked cod with the chopped parsley and olive oil. Set this aside while you prep the vegetables.
Chop the onion and bell pepper into small pieces — you want them fine enough to blend nicely with the beans.
In a good-sized bowl, combine the drained beans with the onion, pepper, and that lovely cod mixture you set aside earlier.
Dress everything with the white wine vinegar and add just a touch of salt — remember the cod already brings some saltiness to the party.
Now for the pretty part. Grab a plating ring (I like using a square one, but round works just as well) and place it right on your serving plate.
Spoon the bean mixture into the ring, press down gently, then carefully lift the mold away to reveal your perfect timbale.
Halve those cherry tomatoes, give them a pinch of salt and a drizzle of oil.
