Here's a dessert that doesn't ask much of you but gives plenty back: fresh strawberries nestled in whipped cream, tucked inside flaky puff pastry, and finished with a drizzle of dark chocolate. - 150g wild rice.
- 120g home-cooked chickpeas.
- 50g dried radish sprouts.
- 1 spring onion.
- black olives, pitted and stored in oil.
- 200g feta cheese, cut into cubes.
- salt.
for the vinaigrette:
- 6 or 7 tablespoons extra virgin olive oil.
- 1 clove of garlic, minced.
- chopped parsley.
- freshly ground black pepper.
- 2 tablespoons caramel vinegar.

In a bowl, combine the caramel vinegar, olive oil, and black pepper. Use a hand whisk to emulsify everything together, then stir in the garlic, parsley, and cubed feta cheese.
Cover the bowl with plastic wrap and let it rest in the fridge for at least an hour so the flavors can really meld together.
Boil the rice in plenty of salted water, following the package instructions—usually around 40 minutes. Once it's tender, drain well and set aside.
To prepare the salad: grab a large bowl and toss in the spring onion cut into thin strips, the cooked chickpeas, and the radish sprouts.
Add the black olives and the marinated feta cheese with all its flavorful dressing. Mix everything together until it's well combined, and you're ready to serve.Enjoy!
