Ingredients
- 250g Maria cookies (can be gluten-free).
- 100g sugar.
- 100g dark chocolate.
- 50g cocoa powder.
- 1 packet baking powder (Royal).
- 4 whole eggs.
- 1 pinch of salt.
- 100g milk.
- 100g extra virgin olive oil.
You'll also need:
- 1 cake pan, 22cm diameter.
- Parchment paper for the base.
- Butter to grease the pan.
- Icing sugar for dusting (optional).
Preparation
Grease your pan with butter and stick a round piece of parchment paper to the bottom.
Preheat your oven to 180°C, top and bottom heat.
Crush the cookies into fine crumbs...
Mix in the cocoa powder and baking powder with the crushed cookies.
In a separate bowl, beat the whole eggs with a pinch of salt and the sugar until well combined.
Add the milk, the chocolate (melted in a double boiler), and the oil. Beat everything together until it's smooth and well blended, then fold in the cookie mixture with the cocoa and baking powder.
Pour this batter into your prepared pan...
and bake for 40 to 45 minutes. Check that it's cooked through by poking a toothpick into the center — it should come out clean.
Turn it out of the pan and let it cool on a wire rack...
Once it's completely cool, dust the top with icing sugar...
