Spinach, Fresh Cheese, and Tomato Sauce Lasagna

ingredients serves 6 750g fresh spinach. 3 spring garlic cloves. 400g fresh cheese. salt. 100ml extra virgin olive oil. 400g béchamel sauce. 24 lasagna sheets. 80g grated Parmesan cheese. for the béchamel: 40g butter. 1 tablespoon extra virgin olive oil. 40g flour. 500ml milk. ground black pepper. salt. for the tomato sauce: 600g ripe tomatoes. 2 garlic cloves. 1/2 teaspoon sugar. salt. oregano. 3 tablespoons extra virgin olive oil.   preparation Start by washing the spinach well. Blanch it quickly in boiling water, then drain and chop it up into smaller pieces. Take the fresh cheese and mash it with a fork—don't make it too smooth, leave some texture to it.   In a pan with the olive oil, sauté the spinach—make sure you've squeezed out as much water as possible—along with the spring garlic, chopped into small pieces. Lemon Cookies





ingredients

Makes about 30 cookies
  • 3 whole eggs.
  • Juice of 2 lemons (120cc, strained).
  • 220g sugar.
  • Grated zest of 1 lemon.
  • 45g butter, at room temperature.
  • 240g cake flour.
  • 10g baking powder (like Royal brand).
  • Powdered sugar for dusting.

preparation

Melt the butter in a small saucepan over gentle heat. You don't want it to boil—just let it melt completely, then take it off the stove. Stir in the lemon juice and zest, then the sugar, and finally the eggs, beaten like you're making an omelet.
Set the saucepan in a bain-marie (water bath) and cook, stirring constantly, until the mixture thickens into a lovely lemon curd. Let it cool down a bit before moving on.
Once the lemon mixture has cooled, fold in the flour and baking powder, mixing until everything comes together smoothly.
Cover the bowl and pop it in the fridge for at least an hour. The dough needs to firm up.
After the chilling time, heat your oven to 180°C with both top and bottom heat.
Using a spoon, scoop up bits of dough and roll them into little balls, placing them on a baking sheet lined with parchment paper.
Bake for about 15 minutes, give or take, until the cookies start turning golden around the edges.
Take them out and let them cool completely on the tray.
Once they're cool to the touch, dust them generously with powdered sugar.
