The warm weather's here, which means it's time for salads and fresh dishes! Ingredients for 8 people yellow pepper mousse: 150g roasted yellow pepper. 120ml heavy cream. 2 whole eggs. salt. freshly ground black pepper. red pepper mousse: 150g roasted red pepper. same ingredients as the yellow pepper mousse above. green pepper mousse: 150g roasted green pepper. same ingredients as before. you'll also need: 1 rectangular glass loaf pan (24x12cm). olive oil for greasing the pan. parchment paper. cherry tomatoes and lettuce greens. Preparation To roast the peppers, you can follow the recipe here . Once done, peel them, remove the seeds, and set aside. Grease your loaf pan with olive oil, then cut a strip of parchment paper to fit inside the pan as shown in the photo. Brush the paper with oil too... Ingredients
for 4 people- 4 raw pig's trotters, split in half lengthwise.
- 1 large onion.
- Salt.
- Chopped garlic and parsley.
- Extra virgin olive oil.
Preparation
Boil the trotters...
and the onion in boiling water for about an hour. Add salt and check that they're cooked through but still holding together — you don't want them falling apart.
When they've cooled enough to handle (don't stick them in the fridge or they'll get too cold), pull out whatever bones come away easily...
Cover them with plastic wrap and pop them in the fridge until you're ready to cook.
When it's time to serve, heat up a griddle with a few drops of oil. Cook the trotters until they turn golden and get those lovely crispy edges.
While they're sizzling away, mix the chopped garlic and parsley with 4 or 5 tablespoons of oil. Just before you take them off the heat, drizzle this garlicky oil over the trotters, flip them once, and serve right away...
