Tiramisu and Plum Cup

  Ingredients For 6 people For the tiramisu: 250g mascarpone cheese. 1 tablespoon rum (optional). 2 egg yolks. 120g sugar. 200g whipped cream with two tablespoons of icing sugar. For the fruit base: 380g plums, peeled and pitted. 1 tablespoon lemon juice. 80g sugar. 80g water. You'll also need: Ladyfinger biscuits, or magdalenas, or sponge cake. Fresh or frozen raspberries.   Preparation To make the plum compote : Put the plums, peeled, pitted, and cut into small pieces, in a saucepan over heat with the 80g of water, lemon juice, and 80g of sugar. Cook for two minutes, remove from heat, strain, and set aside the pulp and juice separately. Mix the tablespoon of rum into the juice (if you're using it). To make the tiramisu : Beat the two egg yolks with the 120g of sugar and cook in a double boiler for 8 minutes, counting from when the water starts to boil. Flatbread with Asparagus, Onion and Egg




Ingredients

for 6 people

for the dough (makes a 35x30cm flatbread):

  • - 300g pastry flour.
  • - 75g extra virgin olive oil.
  • - 75g beer.
  • - 75g water.
  • - 1 tsp baking powder.
  • - 1/2 tsp salt.

for the topping:

  • - 1 bunch of asparagus.
  • - 2 medium onions.
  • - 2 whole eggs.
  • - salt.
  • - extra virgin olive oil.
  • - oregano.
  • - 150g goat cheese log.

Preparation

Start by softening the onions, sliced thin, over low heat until they turn golden at the edges.
Rinse the asparagus and trim off the woody ends.
Steam them or boil for about 4 to 5 minutes. Let them cool down, then chop into pieces.
Mix and knead together all the ingredients for the dough. Shape it into a ball and let it rest in an oiled bowl for around 30 minutes.
Once rested, turn the dough out onto your work surface. Flatten it and shape into a rectangle or square.
Heat your oven to 200°C.
Place the dough on a baking sheet lined with parchment paper...

Beat the two eggs and mix them with the crumbled cheese and a pinch of salt.
Spread this mixture over the dough and sprinkle with oregano...
Then scatter the asparagus over top...
And finally, add the caramelized onions...
Slide it into the oven and bake for 15 to 20 minutes...
