Here's a dessert that doesn't ask much of you but gives plenty back: fresh strawberries nestled in whipped cream, tucked inside flaky puff pastry, and finished with a drizzle of dark chocolate. Simple, elegant, and just the thing when strawberries are at their best. Ingredients For 4 people 12 large strawberries. 1/2 sheet of rectangular puff pastry. 400g heavy cream for whipping (35% fat). 60g powdered sugar for whipping the cream. 75g dark chocolate (I use Nestlé Postres). 40g heavy cream (35% fat). 1 egg yolk beaten with a few drops of water. Ingredients
For 4 servings
- 3 Greek yogurts.
- 3 teaspoons sugar.
- 1 small cup of strong coffee.
- 300g heavy cream, whipped with 30g powdered sugar.
- 12 ladyfingers.
- 2 tablespoons rum.
- Pure cocoa powder.
Preparation
If you want to make your own ladyfingers from scratch, I've got the recipe here. It's worth the effort, though store-bought works just fine too.
In a mixing bowl, whisk together the yogurts with the three teaspoons of sugar, the rum, and the strong coffee. Set this mixture aside.
Cut the ladyfingers in half and arrange them around the inside edges of your serving glasses, standing them up to form a little crown.
Spoon the coffee-yogurt mixture into the center of each glass.
Whip the cream with the powdered sugar until it holds stiff peaks. Using a pastry bag, pipe the whipped cream on top of the yogurt layer in each glass.
Just before serving, dust generously with cocoa powder.
