Chocolate-Filled Magdalenas

ingredients

for 12 magdalenas
  • 3 large eggs.
  • 175g sugar, plus a bit extra for dusting.
  • 60g milk, at room temperature.
  • 190g sunflower oil.
  • 210g cake flour.
  • 1 packet baking powder (like Royal brand).
  • a pinch of salt.
  • paper cupcake liners.
  • chocolate hazelnut spread (like Nutella).

preparation

Using an electric mixer, beat the sugar with the eggs and salt until the mixture gets nice and frothy.
Pour in the milk and sunflower oil, then beat for another 2 minutes.
Sift in the baking powder and flour, and keep beating for 2 to 3 minutes more.
Pop the batter in the fridge and let it rest for five minutes.
Meanwhile, heat your oven to 200°C with the fan on, or use top and bottom heat if that's what you've got.
Place the paper liners in your muffin tin. The tin keeps the liners from spreading open while they bake.
Now, spoon your batter into a piping bag and pipe a little into each liner...
Drop a teaspoon of chocolate spread right on top of the batter...
Then finish filling each liner about three-quarters full with more batter...
Slide them into the oven and bake for 12 to 14 minutes, until they're golden on top.
Take them out and let them cool down completely...

Happy baking!
