When you're after a proper one-pot meal, nothing beats a good rice dish. Today we're making surf and turf rice! Ingredients for 4 people 500g bomba rice. 1.8 litres chicken stock. 12 prawns. 2 chicken thighs and 2 wings. 1 large onion. 2 garlic cloves. 1 green pepper (Italian style). 1/2 red pepper. 1/2 courgette. salt. extra virgin olive oil. Preparation Chop the thighs and wings into small pieces and brown them in a paella pan with 2 tablespoons of oil. Season with salt and set aside. Using the same oil, sauté the garlic and onion, finely chopped. Add the peppers and courgette cut into long strips, almost like little batons. Stir the reserved chicken back into the sofrito along with the rice. Let everything cook together for a couple of minutes, then pour in the hot stock—it should be just about to boil. - 300g home-cooked chickpeas.
- one red onion.
- one zucchini.
- one firm red tomato for salads.
- wrinkled black olives.
- gouda cheese, cut into cubes.
- salt.
- extra virgin olive oil.
for marinating the zucchini:
- 5 anchovies in oil.
- one clove of garlic.
- 6 tablespoons extra virgin olive oil.
- 4 tablespoons cider vinegar.
preparation
To cook the chickpeas from scratch: Put water and 2 unpeeled garlic cloves in a pot. When it starts to boil, add the drained chickpeas — you'll need to soak them for 24 hours beforehand.
Let them boil until tender, add salt, and set aside.
To marinate the zucchini: Mash the anchovies with a fork and mix them with the oil, vinegar, and finely chopped garlic.
Separately, wash the zucchini, slice it into spirals, and place it in a bowl with the marinade.
Pop it in the fridge for an hour.
Peel the onion and slice it into thin rounds.
Wash the tomato and cut it into cubes.
In a salad bowl, toss together the drained chickpeas, the olives, the cheese cubes, the onion, and the zucchini with all its lovely marinade, and bring it straight to the table.
