Walnut and Chocolate Cookies

Ingredients

for 25 or 26 cookies
  • - 250g cake flour.
  • - 1 whole egg.
  • - 50g white sugar.
  • - 50g brown sugar.
  • - 100g butter at room temperature.
  • - 1 tsp baking powder.
  • - 1 pinch of salt.
  • - 75g walnuts, roughly chopped.
  • - 50g dark chocolate chips.

Preparation

Using a food processor or an electric mixer (the kind you'd use for whipping cream), beat the butter together with both sugars until well combined.
Add the whole egg and the pinch of salt, and keep beating until everything is nicely incorporated.
Mix in the baking powder and flour, then fold in the chopped walnuts and chocolate chips by hand.
Shape the dough into a ball, cover it with plastic wrap, and pop it in the fridge for 10 minutes.
After 10 minutes, pinch off pieces of dough and roll them into small balls, then flatten them gently with the palm of your hand.
Place them on a baking sheet lined with parchment paper, and let the unbaked cookies chill in the fridge for at least 6 hours. You can even leave them overnight if that works better for you.
Preheat your oven to 190°C with both top and bottom heat. Slide the cookies in and bake for about 15 minutes, or until they're lightly golden on the outside but still soft in the middle.

Happy snacking!
