Vegetable and Fresh Cheese Flatbread

Ingredients

For the dough:

  • 500g all-purpose flour.
  • 125g extra virgin olive oil.
  • 125g beer.
  • 125g water.
  • 1 teaspoon baking powder.
  • 1/2 teaspoon salt.

For the filling:

  • 1 zucchini.
  • 3 or 4 ripe but firm tomatoes.
  • 250g fresh cheese.
  • 80g shredded mozzarella cheese.
  • Salt, freshly ground black pepper.
  • Oregano.
  • Extra virgin olive oil.

You'll also need:

  • 1 baking tray, 44x32cm.
  • Parchment paper.

Preparation

Mix together the dough ingredients and knead until you have a smooth ball. Pop it in an oiled bowl, cover it up, and let it rest while you prep the vegetables.
Preheat your oven to 200°C, with heat from both top and bottom.
Wash the tomatoes and slice them into rounds about 1/2 to 1cm thick without peeling them. Place them in a colander and sprinkle with salt to draw out some of their moisture.
After about 30 minutes, take the dough from the bowl and roll it out on your work surface, dusting with a little flour as you go.
Lay it on the baking tray lined with parchment paper.
Spread the shredded mozzarella over the dough.
Slice the zucchini into thin rounds and slice the fresh cheese into thin pieces as well.
Arrange everything on top of the flatbread, alternating zucchini, tomato, and fresh cheese slices.
Sprinkle with salt, drizzle with olive oil, and dust with black pepper and oregano.
Slide the tray into the oven and bake for about 30 minutes, or until the dough is golden brown.
This flatbread is best served fresh from the oven, though it's still delicious at room temperature.
