ingredients
for two people
- two boneless ribeye steaks.
- small pearl onions.
- 200cc black vermouth.
- 150cc port wine.
- salt.
- freshly ground black pepper.
- extra virgin olive oil.
preparation
Start by boiling the onions with their skins on in a pot of boiling water for about 10 minutes. Drain them well, peel off the skins, and keep them whole. Set aside for later.
Heat up a griddle pan until it's nice and hot, add just a few drops of oil, and cook the ribeye steaks. Season them with salt and pepper, then take them off while they're still quite rare.
In the same pan, add a touch more oil and lightly fry the pearl onions.Once they start to turn golden, pour in the vermouth and port wine. Let it reduce a bit, then add the ribeye steaks back in just to warm them through. Serve right away while everything's still hot.
Enjoy your meal!
